En sustitución de la carne se utilizan verduras frescas picadas al gusto, que se convierten en un festín de colores y sabores, y aportan nutrientes y variedad a la receta: calabacín, berenjenas, pimentón rojo, cebollas, champiñones o cualquier otra verdura o vegetal preferido. Pasticho Vegetariano

Ingredientes:

  • Láminas de pasta para pasticho.

  • Salsa de Tomate y Albahaca Frescarini™.

  • Verduras picadas en tiras o juliana, al gusto.

  • Queso Mozzarella, al gusto

 

Preparación:

  1. Precalienta el horno a 180°C. Prepara el escenario para hornear tu delicioso pasticho.

  2. Cocina la pasta para pasticho según las instrucciones del paquete, para obtener una pasta al dente perfecta.

  3. En una sartén grande, agrega un poco de aceite de oliva y saltea las verduras picadas a fuego medio, hasta que estén tiernas y doradas. Puedes agregar sazones como orégano, albahaca o pimienta al gusto.

  4. En una fuente para horno, esparce una capa de Salsa de Tomate y Albahaca Frescarini™ hasta cubrir todo el fondo de la fuente creando así la base de tu pasticho.

  5. Sobre la salsa, agrega una capa uniforme de pasta cocida, distribuyéndola bien por toda la superficie.

  6. Luego, sobre la capa de pasta esparce las verduras salteadas de manera uniforme, aportando color, sabor y textura a tu pasticho.

  7. Continúa alternando capas de salsa, pasta y verduras hasta llenar la fuente para horno.

  8. Termina tu pasticho con una capa de pasta* y una capa abundante de queso mozzarella rallado, que se derretirá en el horno creando una textura irresistible.

*(Si se quiere dar un toque más cremoso, preparar una salsa blanca simple o Salsa Bechamel- con leche, harina, mantequilla, nuez moscada y sal, y colocarla al final antes del queso mozzarella). 

  1. Hornea durante 20-25 minutos, o hasta que el queso esté dorado y burbujeante.

  2. Observa con atención tu pasticho mientras se cocina, asegurándote de que el queso se dore uniformemente y la pasta se caliente por completo.

  3. Retira del horno y deja reposar durante 5 minutos antes de servir. Permite que el pasticho se asiente un poco para que los sabores se integren y la textura sea perfecta.

Las EII, como la enfermedad de Crohn y la rectocolitis ulcerosa, afectan a millones de personas en todo el mundo, no tienen cura y aumentan el riesgo de padecer otras patologías como anemia y cáncer de colón

Las enfermedades inflamatorias intestinales (EII) son un trastorno autoinmune que genera una inflamación crónica en el colon y el intestino delgado, que puede aumentar el riesgo de padecer otras afecciones, por lo que deben ser controladas mediante tratamientos y hábitos sanos, así como recibir un seguimiento endoscópico para mejorar la calidad de vida de quienes las padecen.

La gastroenteróloga del Grupo Médico Santa Paula (GMSP), doctora Rosmary Maza, explicó que las EII se clasifican en dos tipos y ambos producen generalmente una respuesta inmunológica anormal en los pacientes: la enfermedad de Crohn, que afecta desde la boca hasta el ano, y la rectocolitis ulcerosa (RCU), que produce lesiones inflamatorias crónicas en el colon y el recto. 

 

Refirió que no existe una causa única que genere las EII, aunque, se considera que entre sus factores de riesgo se encuentran: el estrés, las enfermedades infecciosas intestinales no controladas, componentes genéticos (antecedentes familiares), el cigarrillo y el alcohol.

Diagnóstico 

Explicó que para diagnosticar la EII se requiere la consulta especializada para evaluar al paciente y sus síntomas, y por lo general se solicitan estudios de diagnóstico como laboratorio y evaluaciones de imágenes, tales como tomografía, así como endoscopias (tanto gastroscopia como colonoscopia, que son las pruebas específicas que permiten tomar muestras para realizar un diagnóstico por biopsia). También se puede utilizar cápsula endoscópica, que ayuda a diagnosticar enfermedad de Crohn en el intestino delgado.

 

La doctora Maza aseguró que el GMSP posee un grupo de especialistas en gastroenterología y anatomía patológica altamente capacitado, que es fundamental para el diagnóstico y tratamiento de las EII. Además, la institución cuenta con el Servicio de Gastroenterología, que dispone de equipos de alta tecnología y gran calidad de imagen, que permiten obtener tomas precisas de biopsia.

Riesgos  

Asimismo, la gastroenteróloga aclaró que las EII aumentan el riesgo de padecer otras patologías como anemia y cáncer de colón, por eso “el seguimiento endoscópico y su control regular es fundamental”. Agregó que estos padecimientos también presentan complicaciones propias, como la estenosis intestinal y las fístulas, en el caso de la enfermedad de Crohn, que en diversos casos amerita cirugía.

 

Enfatizó que las EII afectan la calidad de vida de los pacientes puesto que pueden llegar a generar 8 o 10 evacuaciones al día, así como también dolor abdominal intenso, los cuales impiden realizar las actividades diarias y ocasionan debilidad física, que se intensifica si no se controla la afección y si no se tiene una nutrición adecuada.

 

Señaló que, aunque la EII es una afección crónica, actualmente, existen tratamientos que logran mejorar la calidad de vida del paciente, por lo que le permiten mantener sus actividades cotidianas.

 

Tratamiento

Recalcó que el tratamiento de las EII varía dependiendo de la afección, pero incluye:

  • Administración de fármacos, que implican la utilización de esteroides y medicamentos inmunomoduladores.

  • Cambios en el estilo de vida, y la alimentación –mantener e incrementar alimentos ricos en fibra y evitar productos lácteos– y manejo del estrés.

  • Uso de probióticos en ciertos casos, ya que estos “contribuyen a controlar la inflamación crónica y a tener una flora intestinal saludable”.

Colon irritable

Las EII y el Síndrome de Colon Irritable (SCI) son dos patologías crónicas comunes que afectan el sistema digestivo. Si bien comparten algunos síntomas, como dolor abdominal, cambios en hábitos intestinales e hinchazón, así como el hecho de que el estrés puede empeorar la sintomatología en ambas afecciones, existen diferencias importantes entre las dos en cuanto a causa, fisiopatología, manifestaciones clínicas y tratamiento.

En cuanto a qué las produce, las EII son autoinmunes e inflamatorias, mientras que el SCI es un trastorno funcional y su causa es multifactorial). Las EII pueden tener complicaciones graves y el SCI no. Sin embargo, el tratamiento adecuado puede mejorar la calidad de vida en ambas afecciones.
